5 years ago, Icelandic artist Óskar Ericcson decided to make a gin that would be a perfect companion while fishing, while exploring the barren and romantic Icelandic countryside. The components of this old tom gin are botanicals that grow on the banks of a stream in Iceland: e.g. northern thyme, angelica, and the extra ingredient is honey. Óskar himself, collects these in the summer and each bottle of gin is hand-numbered in the distillery. The gin – Himbirmi – got its name from the northern diving birds, which is a species of bird and is well known to Icelandic anglers.
